Breakfast Pizzas: 3 Ways

Why have leftover pizza when you can make breakfast pizza?



  • For the base:
  • 3 eggs
  • 2 teaspoons butter
  • Classic:
  • 1 tablespoon feta
  • 1/4 cup grape tomatoes, halved
  • 1/4 cup caramelized onion
  • 1/4 bunch basil
  • Middle Eastern:
  • Roasted squash cubes
  • Tahini
  • Cilantro
  • Korean:
  • 1/4 cup kimchi
  • 1/2 tablespoon Sriracha (more if you love the heat)
  • 2 scallions, sliced

Let's get Cooking...

  1. Whisk eggs in a bowl until super fluffy, the fluffier the better.
  2. Add butter to a medium saucepan on medium-high heat. Pour in eggs and use a spatula to move the mix in from the center, creating layers so that more of the eggs cook and you get little mountains.
  3. Add toppings (pending your pizza choice), cover with a lid and cook for another minute.
  4. Slide onto a plate and dig in.
