4-Ingredient Sweet Potato Pie


You don't need bells and whistles to make a ridiculously yummy holiday pie.



  • 4 small baked sweet potatoes (15 ounces total)
  • 1/4 cup vanilla ice cream
  • 1 large sheet puff pastry (approximately 4 x 8 in.)
  • 1 egg yolk

Let's get Cooking...

  1. Microwave baked potatoes for 2 minutes if they are cold. Peel and mash the potatoes until smooth. Add in ice cream and mix well.
  2. Add half an egg yolk and mix until thoroughly combined. Combine leftover egg yolk with 1 teaspoon water and set aside. Put the potato mixture into a piping bag.
  3. Put your puff pastry onto a baking sheet lined with parchment paper. Cut as instructed on the video and poke holes throughout the pastry.
  4. Pipe the potato mixture onto the puff pastry sheet. Brush on egg yolk and bake for 15 minutes at 400 degrees F.
  5. Take out of the oven and let it cool. Cut into smaller pieces and serve with ice cream. Garnish with a sprig of mint of desired.
