Animal Mousse Cakes

Moist sponge cakes made of white and milk chocolates and Oreo mousse are decorated to look like adorable animals.

Ingredients

  • For the chocolate mousse cakes:
  • 1 teaspoon gelatin powder
  • 1 1/2 tablespoons cold water
  • 5 ounces milk chocolate
  • 1/2 cup whipping cream
  • 1 1/3 cups whipped cream
  • For the white chocolate and cookies and cream cakes:
  • 2 teaspoons gelatin
  • 3 tablespoons cold water
  • 10 ounces white chocolate
  • 1 cup whipping cream
  • 2 2/3 cups whipped cream
  • 1/2 cup crushed Oreos
  • For assembly:
  • Vanilla pound cake, sliced into 1-inch slices
  • Marble pound cake, sliced into 1-inch slices
  • Chocolate pound cake, sliced into 1-inch slices
  • 4 ounces dark chocolate
  • 2 ounces pink candy melts
  • Mini Oreos
  • Mini chocolate chip cookies
  • Slivered almonds

Let's get Cooking...

  1. For the chocolate mousse cakes: Lightly grease a tray of 2 1/2-inch silicone bombe molds. Bloom the gelatin in the cold water.
  2. In a heatproof bowl set over simmering water, melt the milk chocolate and whipping cream. When chocolate is melted, set aside. Warm the gelatin over low heat until it is liquid. Pour into the chocolate mixture and mix well.
  3. Incorporate whipped cream into the chocolate, and spoon mixture into molds. Refrigerate overnight to set.
  4. For the white chocolate and cookies and cream mousse cakes: Lightly grease two trays of 2-inch silicone bombe molds. Bloom gelatin in the cold water.
  5. In a heatproof bowl set over simmering water, melt the white chocolate and whipping cream. When chocolate is melted, set aside. Warm the gelatin over low heat until it is liquid. Pour into the chocolate mixture and mix well.
  6. Incorporate whipped cream into the chocolate, and spoon mixture half the mixture into molds. Mix the crushed Oreos into the remaining mixture, and spoon into remaining molds. Refrigerate to set overnight.
  7. Assembly: Using a 2 1/2-inch round cutter, cut bases out of the poundcake. Carefully unmold the mousse cakes and place on top of each round.
  8. Melt the dark chocolate and place into a piping bag. Melt the pink candy melts and place into a separate piping bag.
  9. Make faces on each of the mousse cakes by piping dark chocolate eyes, noses and mouths, and pink chocolate for cheeks.
  10. Cut the mini Oreos and mini chocolate chip cookies in half to use as ears for the pandas and bears.
  11. Decorate the white cakes as bunnies with almond sliver ears, the cookies and cream cakes as pandas with mini Oreo ears and the chocolate cakes as bears with mini chocolate chip cookie ears.
  12. Serve immediately.
