1 cup all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons black pepper
1 1/2 cups buttermilk
1 egg, separated
2 tablespoons unsalted butter, melted
Butter for greasing the pan
6 ounces mozzarella, cut into 1/4-inch cubes
2 tablespoon chopped parsley
1 tablespoon grated Parmesan
1 cup marinara sauce
Let's get Cooking...
Preheat oven to 170 degrees.
In a medium bowl, whisk dry ingredients together. Set aside.
In a medium bowl, add egg white and whip until stiff peaks form. Set aside.
In another bowl, whisk together buttermilk, egg yolk and melted butter until well combined. Make a well in the center of the dry ingredients. Pour wet ingredients in and fold until completely combined. Gently fold egg white into the batter.
Place the aebleskiver pan on medium-low heat. Brush each round with melted butter. When it sizzles add 1 full tablespoon of batter to each round. Add a cube of cheese in the center. Using a skewer, gently push the cube of cheese down into the center, trying to cover it with batter. When air bubbles show up in the batter, use 2 skewers to turn bites halfway. Then flip over. Cook for 60 to 90 seconds more. Remove to a sheet tray. Keep warm in oven.
Sprinkle with parsley and Parmesan, and serve with marinara sauce on side.
