1 cup all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 egg, separated
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
Melted butter for greasing the pan
6 cooked bacon slices, chopped
1/4 cup maple syrup, plus more for drizzling

Preheat oven to 170 degrees.
In a medium bowl, whisk dry ingredients. Set aside.
In a separate medium bowl, add egg white and whip until stiff peaks form. Set aside.
In another bowl, whisk together buttermilk, egg yolk and melted butter until well combined. Make a well in the center of the dry ingredients. Pour wet ingredients in and fold until completely combined. Gently fold egg white into the batter.
In a small bowl, stir together bacon and syrup. Set aside.
Place the aebleskiver pan on medium-low heat. Brush each round with melted butter. When it sizzles add 1 tablespoon of batter to each round.
Drop a 1/2 teaspoon of bacon mixture into each. Using a skewer, gently push the mixture down into the center. When air bubbles show up in the batter, use 2 skewers to turn cake bites halfway. Then flip over. Cook for 60 to 90 seconds more. Remove to a sheet tray.
