1 cup all-purpose flour
1/4 cup granulated sugar
4 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup buttermilk
4 tablespoons unsalted butter, melted
1 tablespoon red food coloring
Powdered sugar for sprinkling
Cream cheese filling:
8 ounces cream cheese, room temperature
1/3 cup powdered sugar
1/2 teaspoon vanilla extract
Let's get Cooking...
In a large bowl, add cream cheese, sugar and vanilla extract. Whisk until smooth. Place in refrigerator until ready to use. Can be made a day or 2 ahead.
In a medium bowl, whisk dry ingredients. Set aside.
In another bowl, whisk together buttermilk, egg, melted butter and food coloring until well combined. Make a well in the center of the dry ingredients. Pour wet ingredients into the well and fold until just combined.
Place the aebleskiver pan on medium-low heat. Brush each round with melted butter. When it sizzles add 1 tablespoon of batter to each round.
Drop 1/2 teaspoon of cream cheese mixture into each. Using a skewer, gently push the mixture down into the center. Add 1/2 teaspoon of more batter on top if necessary to cover. When air bubbles show up in the batter, use 2 skewers to turn cake bites half way. Then flip over. Cook for 60 to 90 seconds more. Remove to a sheet tray.
