Alfajor Cookies recipe
7 ounces flour
10 1/2 ounces Corn starch
2 teaspoons baking powder
1/2 teaspoon baking soda
7 ounces butter
5 1/3 ounces sugar
3 egg yolks
Zest of 1 lemon
1 teaspoon vanilla extract
2 cups dulce de leche
7 ounces grated coconut
Let's get Cooking...
Mix all the dry ingredients and reserve.
Beat butter with sugar until obtaining a clear mixture . Add the egg yolks and beat some more.
Add the lemon zest and vanilla extract. Finally, incorporate the dry ingredients.
Open the dough on a floured surface to about 0.2 inches thick.
Shape the alfajor bottoms with a round cutter (1 1/2 inches).
Preheat oven to 356 degrees. Arrange in a greased pan and bake for 15 minutes or until golden brown.
Fill the alfajores with dulce de leche and coat the edges in coconut.
