Ingredients

  • 7 ounces flour
  • 10 1/2 ounces Corn starch
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 7 ounces butter
  • 5 1/3 ounces sugar
  • 3 egg yolks
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 2 cups dulce de leche
  • 7 ounces grated coconut

Let's get Cooking...

  1. Mix all the dry ingredients and reserve.
  2. Beat butter with sugar until obtaining a clear mixture . Add the egg yolks and beat some more.
  3. Add the lemon zest and vanilla extract. Finally, incorporate the dry ingredients.
  4. Open the dough on a floured surface to about 0.2 inches thick.
  5. Shape the alfajor bottoms with a round cutter (1 1/2 inches).
  6. Preheat oven to 356 degrees. Arrange in a greased pan and bake for 15 minutes or until golden brown.
  7. Fill the alfajores with dulce de leche and coat the edges in coconut.
