Chicken Tenders With Ketchup

Kick your chicken strips up a notch with almond flax and spicy ketchup.



  • 1 cup almond meal
  • 1/2 cup ground flax meal
  • 2 tablespoons fresh rosemary, finely chopped
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 6 chicken breasts, pounded thin and cut into long strips
  • 1 egg, beaten
  • Oil or baking spray for drizzling
  • Smoky Ketchup:
  • 1 teaspoon smoked paprika
  • 1/2 cup ketchup
  • 1/4 teaspoon Sriracha (adjust according to preference)

Let's get Cooking...

  1. Preheat oven to 400°F and line a baking sheet with parchment paper. In a large bowl, mix together the almond meal, flax meal, rosemary, pepper, salt, and garlic powder.
  2. Dip each piece of chicken into the egg first and then the almond-flax mixture. Place on baking sheet. Continue with remaining chicken, leaving a little space between the pieces on the baking sheet.
  3. Drizzle liberally with oil and bake for 30 minutes until crisp and golden brown.
  4. Mix all ingredients together for the smoky ketchup and serve with chicken.
