Apple Pie Pizza

Autumn practically demands that you make apple pie, so why not do it as a pizza?

Ingredients

  • 1/4 cup of warm water
  • 1 tablespoon brown sugar
  • 1 teaspoon yeast
  • 1 1/2 cups of all-purpose flour
  • 1 pinch of salt
  • 2 tablespoons olive oil
  • 1/2 cup of warm water
  • Cornmeal
  • 1 Granny Smith apples, thinly sliced
  • Juice and zest of one lemon
  • 1/3 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup SKOR toffee pieces
  • 2 tablespoons butter, melted
  • Icing sugar, for dusting

Let's get Cooking...

  1. To make the dough, first combine 1/2 cup warm water with sugar and yeast in a small bowl and set aside for 8 minutes until yeast foams.
  2. In a large bowl add flour and salt. Pour in the foamy mixture. Fill that same little bowl with the rest of the warm water and then pour into larger bowl. This is to make sure you're getting all the yeast. Add in olive oil and stir - first using a wooden spoon. Once combined, you can turn the dough out onto a light flour surface and knead for 10 minutes until the dough is smooth and stretchy. Place the dough in a oiled bowl and coat with oil. Cover with plastic wrap and keep in a warm place for 1-2 hours until doubled in size.
  3. In the meantime, combine all filling ingredients in a bowl and set aside. Preheat to oven to 500F. On a lightly floured surface, roll out your dough and place on a baking sheet covered with a sprinkle of cornmeal. Top with the filling and brush the crust with melted butter, before baking for 5-10 minutes until golden brown on the crust.
  4. Dust with a little icing sugar before serving.
