Why mess with a classic? This is the perfect apple pie.
1 1/2 cups flour
1 cup sugar
1/2 tablespoon baking powder
2.1 ounce melted butter
1 egg and 5 yolks
1 cup whole milk
1/2 tablespoon cornstarch
1/2 teaspoon vanilla extract
2 small Fuji apples
1 tablespoon granulated sugar
1/2 teaspoon cinnamon powder

In a bowl, add flour, 1/2 cup sugar, baking powder and mix. Make a hole in the middle and add melted butter, 1 egg and 1 yolk. Mix until forming a smooth dough. Store in the fridge while preparing the filling.
Heat the milk in a small pan over low heat until warm.
Beat the 3 yolks with 1/2 cup sugar and cornstarch until the mix is clear and fluffy.
Pour the milk in the yolk mix while continuously beating.
Transfer to a pan and cook over medium heat until forming a thick cream. Remove from heat and add the vanilla extract.
Split the dough in two and flatten one half with a rolling pin. Cover a springform pan.
Fill with the cream, layer the apple slices in a half-moon pattern, sprinkle sugar and cinnamon on top.
Make strips with the rest of the dough and braid them over the pie. Baste the strips with yolk and sprinkle with sugar.
Preheat the oven to 356°F. Bake for 40 minutes or until golden.
