Pork Short Ribs

Let the beans and corn sit the previous night.
White the Pigskin and the cut leg for 20 minutes in boiling water to de-grease.
In an oiled pan, place the diced bacon to brown and after 5 minutes add the spring onion and the white part of leak and spring onion.
After 7 minutes, add the pigskin and the pork leg, the meat of the red chorizo; mix all of it and cover with water until it stops boiling.
Then add the beans and the corn and cook for 60-90 minutes.
Finish adding the pork meat and the Short Ribs and the skirt, as well as the diced yam.
Season with the crushed pepper, oregano and sweet and spicy peppers, cook for another 60 minutes.
Serve and decorate with hot sauce and the green portion of the spring onion.
For the hot sauce, in plenty olive oil, salt onion and spring onion with sweet and spicy peppers.
