Bacon Egg & Cheese Fried Rice

This perfect "whenever" meal features crispy bacon and garlic fried rice topped with mozzarella cheese and an egg.

Ingredients

  • Fried Rice
  • 5 strips thick-cut bacon, sliced
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 3 cups white rice, cooked
  • 3 scallions, chopped
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons soy sauce
  • Salt & pepper, to taste
  • Egg Mixture
  • 2 eggs
  • 1 tablespoon milk
  • 1 cup shredded mozzarella cheese

Let's get Cooking...

  1. Cut bacon into half-inch pieces and cook in a sauté pan until golden brown. Set aside.
  2. To the same pan, add the diced onion and minced garlic; sauté in the bacon fat until translucent, about 1 minute.
  3. Add the cooked white rice, bacon and chopped scallions. Mix together.
  4. Add the butter, soy sauce, salt and pepper. Mix together, then set aside.
  5. Mix eggs and milk to make an omelet. Add to pan. Sprinkle mozzarella on top and cover with a lid until cheese is melted.
  6. Place the fried rice on a plate, and add the egg omelet on top of the rice.
  7. Garnish with thinly sliced scallions and bacon bits. Enjoy!
