  • 4-5 limes
  • 12 corn tortillas
  • Vegetable oil to fil a deep pan or pot up to 2 inches

Let's get Cooking...

  1. Marinade:
  2. In a bowl, combine dip, cumin powder, 1 teaspoon garlic powder, 1 teaspoon cayenne powder, and salt and pepper to taste. Throughly coat fish strips and let marinate for 30 minutes - 1 hour.
  3. Prepare toppings:
  4. Combine sliced cabbage, some salt, and the juice of one lime. Massage and let sit for at least 10 minutes.
  5. Make pico de gallo: combine diced tomatoes, red onion, garlic, serrano chiles, lime juice, cilantro, salt and pepper
  6. Heat oil to 370-375. In one bowl, combine 1 teaspoon garlic and one teaspoon cayenne pepper and 1.2 cup flour. In another bowl, make the batter: whisk together 1 cup flour, beer, and baking powder.
  7. Dredge fish strips in seasoned flour, dip into batter, shake off excess and fry for about 2-3 minutes. Don't overcrowd pot.
  8. Drain on paper towel, and begin heating tortillas. Serve!
