Pre-heat oven to 400F and line a sheet tray with parchment paper.
Lay puff pastry sheet on lightly-floured surface and roll up and down a few times to make slightly bigger.
Cut into 2.5-3 inch squares, and place in muffin tin, repeat with each square. Bake for 5 minutes.
Remove from oven, press down the center of pastry and sprinkle cheese into the center of each round. Crack and egg in the center, sprinkle with salt and pepper and bake an additional 8-10 minutes until egg white is opaque. 5. Sprinkle with chopped chives.
