Baked Mozzarella Chicken Rolls


Tired of the same old chicken day in and day out? Looking for a delicious new idea for meal plan?



  • 2 chicken breasts
  • 1 cup bread crumbs
  • 6 tablespoons grated Parmesan cheese
  • 1/2 cup ricotta cheese
  • 1 mozzarella cheese
  • 2 eggs
  • 1 cup spinach
  • 1 cup marinara sauce
  • 5 cherry tomatoes
  • 2 onions
  • Fresh basil or rucola for topping
  • Olive oil, salt & pepper, tooth picks

Let's get Cooking...

  1. Cut the chicken into pieces and HAMMERTIME! them until they are thin. Cut the mozzarella and onions into pieces. Mix spinach with Parmesan. Place eggs and bread crumbs into separate bowls.
  2. Put a spoon of spinach and Parmesan mixture, some pieces of onion and mozzarella on top of a chicken piece. Roll up and stake with a tooth pick. Place in a hot baking dish. Repeat for the remaining pieces of chicken. Bake for 20 minutes at 180°C/350°F.
  3. Finishing: Cover the chicken rolls with marinara sauce, tomatoes and ricotta cheese. Bake for another 3 minutes. Sprinkle with fresh basil and enjoy the tastiness.
