Baked Portobello Mushroom Fries


How to make baked portobello mushroom fries!



  • 3 eggs, beaten
  • 1 1/2 cups flour
  • 2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan
  • 1 tablespoon chopped parsley
  • 4 large portobello mushrooms, cut into strips
  • Salt and pepper
  • Olive oil
  • Garlic dipping sauce:
  • 2 cloves garlic
  • Pinch of kosher salt
  • 1/2 cup low-fat plain yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Let's get Cooking...

  1. Preheat oven to 425°F.
  2. Place flour and beaten eggs in separate shallow dishes. In another shallow dish, mix together the breadcrumbs, Parmesan, and parsley.
  3. Dredge mushroom strips first in flour, then in egg, then coat in breadcrumbs mixture.
  4. Set coated mushrooms on baking sheet with wire rack. Brush olive oil over the mushrooms.
  5. Bake for 15-20 minutes or until golden.
  6. While the mushrooms are baking, prepare the garlic dipping sauce. Mash the garlic with kosher salt. Stir in the yogurt, olive oil and lemon juice.
  7. Serve the portobello mushroom fries with the garlic dipping sauce. Enjoy!
