Cheesy potato and bacon goodness rolled up into a ball of fried, bite-sized comfort.

Ingredients

  • 6 large potatoes, cooked and cubed
  • 1 onion, minced
  • 7 oz bacon, sliced into ¼-inch strips
  • 1 Saint-Nectaire cheese, cubed
  • Flour
  • 3 eggs, beaten
  • Breadcrumbs
  • Oil for frying

Let's get Cooking...

  1. Mash the potatoes.
  2. Brown the onions and the bacon. Mix with the mashed potatoes.
  3. Make balls out of the mashed potatoes and stuff each with a cube of Saint-Nectaire.
  4. Dip balls in flour, then in eggs, then in the breadcrumbs.
  5. Fry balls in oil until crispy.
