Banana Cheesecake With Coconut and Dulce de Leche

  • 1 cup chocolate cookies
  • ⅔ cup butter (16 tablespoons)
  • 7 ounces dulce de leche
  • ⅓ cup sugar
  • ½ cup cream
  • ⅓ cup grated coconut
  • 2 bananas
  • 1 tablespoon gelatin
  • 3-4 tablespoons water
  • 12 ounces Cream cheese
  • 1 ¾ cup dulce de leche
  • 1 banana

  1. For the base:
  2. Process the cookies with the melted butter.
  3. Form the base on a mold or ring.
  4. For the filling: In a bowl, beat the cream cheese with Dulce de leche, the sugar, the cream and the grated coconut.
  5. Then add the crushed bananas and the gelatin while stirring constantly.
  6. Pour the mixture onto the base and refrigerate.
  7. Freeze for 2 hours and refrigerate for 5.
