Banana Foster Pancakes to Banana Foster Fritters

Ingredients

  • 1 1/2 cup flour
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons butter, melted
  • 2 large eggs
  • 1 cup milk
  • Topping:
  • 8 tablespoons butter
  • 3/4 cup packed dark brown sugar
  • 1/2 cup heavy cream
  • 2 bananas
  • 1/2 cup walnuts, chopped
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 cup dark rum
  • Optional:
  • Powdered sugar, for dusting
  • Ice cream

  1. Directions for pancakes:
  2. In a medium bowl, combine flour, sugar, baking powder and salt.
  3. In a small bowl, whisk melted butter, eggs and milk. Add wet ingredients to dry. Cook pancakes; set aside.
  4. Melt butter in heavy skillet; add brown sugar. Cook for 1 minute. Pour in the cream. Add bananas and chopped nuts. Add vanilla and cinnamon. Stir in rum. Spoon over pancakes. Serve with ice cream (optional).

  6. In a medium bowl, combine flour, sugar, baking powder and salt.
  7. In a small bowl, whisk melted butter, eggs and milk. Add wet ingredients to dry. Fold in mashed bananas and walnuts. Fry fritters in oil; set aside.
  8. Melt butter in heavy skillet; add brown sugar. Cook for 1 minute. Pour in the cream. Add vanilla and cinnamon. Stir in rum. Serve with fritters. Dust with powdered sugar.
