Caramelized Banana Pudding Ice Cream


Why choose between fruity ice cream or pudding when you can have both?



  • 2 tablespoons unsalted butter
  • 2 ripe bananas, sliced
  • 1/4 cup light brown sugar
  • 1 package banana pudding instant pudding
  • 1 cup heavy cream, cold
  • 2 cups frozen bananas
  • 1 teaspoon pure vanilla beans
  • 8 vanilla wafer cookies

Let's get Cooking...

  1. In a food processor, combine the instant pudding, heavy cream, frozen bananas, and vanilla beans. Process until the mixture forms an ice cream consistency, about 5 minutes. Scrape down the processor to combine all the ingredients and process again until smooth.
  2. Melt the butter in a medium skillet over medium heat. Add the bananas and sprinkle the brown sugar on top. Cook the bananas until a syrup is formed, about 5 minutes; swirling the pan occasionally. Set aside.
  3. Assemble cookies at the bottom of a small glass, add the ice cream, caramelized bananas, cookies, ice cream, caramelized bananas.
