Barley Tabbouleh

Tabbouleh can be done using so many different grains. Here we add some barley to the mix, to get something more dense and nutty.



  • 1/2 cup of coriander
  • 1/2 cup of mint
  • 1/2 cup of flat leaf parsley
  • 6 spring onions
  • 1/4 cup of pitted black olives
  • 1 whole tomato, cored
  • 3 tablespoons of extra virgin olive oil
  • Juice of 1 lemon
  • 1 pinch of pepper
  • 1 cup of cooked barley
  • Salt to taste
  • Chili powder, extra virgin olive oil and toasted pine nuts to garnish

Let's get Cooking...

  1. Run everything but the barley in the food processor.
  2. Toss the herb mix with the barley.
  3. Garnish
