Soy Sauce Pearls Battleship Sushi Recipe

  • 177 grams Soy Sauce
  • 2 grams Agar Agar
  • Olive Oil
  • Salmon Roe
  • Masago
  • Nori Sheet
  • Sushi Rice
  • Cucumber

Let's get Cooking...

  1. Blend together soy sauce and agar agar, transfer to a pan and bring to a simmer stirring occasionally. Once simmered remove from heat.
  2. Fill tall and narrow container with olive oil and refrigerate until extremely cold. Using a pipette, slowly drip the soy sauce into the olive oil. The soy sauce should become a sphere .
  3. Pour oil into a fine sieve to separate the soy sauce pearls. Rinse them with water and place them into a bowl.
  4. Mix the salmon roe and massage together in equal parts. Fold together gently.
  5. Slice one strip off of nori. Take a ball of sushi rice and wrap nori around it.
  6. Use a couple pieces of rice to seal the end of the nori to the ball. Put about a tables of roe on top of rice and nori.
  7. Slice cucumber into 3 thin slices. Cut off the ends and place on top of Battleship maki. Top with soy sauce pearls. About 1 teaspoon.
