Chocolate ganache makes cupcakes un-bear-ably delicious.
1 cup all-purpose flour
1 cup granulated sugar
1/2 cup cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk
1/4 cup vegetable oil
1/2 teaspoon vanilla
1/2 cup strong, hot coffee (1 teaspoon espresso powder + 1/2 cup boiling water)
1 cup heavy whipping cream
8 ounces chocolate bar, chopped
White and chocolate candy melts
White chocolate chips

Preheat oven to 325°F. Place cupcake liners in muffin tin.
Whisk together flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl.
Add milk, vegetable oil, egg, and vanilla to flour mixture and mix until well combined. Reduce speed and carefully add hot coffee to the cake batter.
Evenly distribute cake batter among liners. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
To make the chocolate ganache, microwave heavy cream until boiling, then pour over chopped chocolate. Let sit for 5 minutes, then stir to combine.
Dip cooled cupcakes in chocolate ganache. Place chocolate melt ears and white chocolate melt mouth. Add white chocolate chips for eyes, then use chocolate ganache and a toothpick to add on facial details.
