Bem Casado Cake recipe
1 lb sugar
1 cup water
1 tbsp butter
12 yolks sieved
1 cup sugar
¼ cup oil
1 cup flour
1 pinch of salt
½ cup boiling water
½ tsp vanilla extract
1 ½ tsp baking powder
Granulated sugar for garnishing
Let's get Cooking...
Mix 1 lb of sugar and water in a small saucepan and heat it without stirring until a thicker sauce is formed.
Remove from heat, let it cool, add butter and 12 sieved yolks.
Return to low heat and stir until a thicker cream is formed. Store in the refrigerator.
Separate the yolks from the whites of 4 eggs. Reserve the whites and, in a bowl, beat the egg yolks with 1 cup of sugar and oil.
In another bowl, mix the flour with the salt.
Add, one at a time, the boiling water and flour to the yolk mix, gradually incorporating.
When well incorporated, add the vanilla extract.
Beat the egg whites.
Add the baking powder to the mixture and, gently, the egg whites.
Arrange in a round pan lined with wax paper. Grease and flour the sides of the pan.
Preheat oven to 356 degrees and bake for 40 minutes.
When the cake has cooled, cut it in half with the aid of a knife or a nylon wire.
Fill the cake with the mixture stored in the refrigerator and garnish with granulated sugar on top.
