Better Breakfast Burrito

There are many words to describe this flavorful burrito, but "basic" isn't one of them.



  • For 2 portions
  • 3 eggs, scrambled
  • 2 large wheat tortillas
  • 1 cups of rice
  • 2 cloves of garlic, minced
  • 1/4 cup avocado, cubed
  • 1/2 small red onion, sliced
  • 4 cherry tomatoes, sliced
  • 1 tablespoon red pesto
  • 2 tablespoons feta cheese, cubed
  • Salt to taste
  • 1/3 cup grated cheddar cheese
  • 8 pieces black olives, chopped
  • Olive oil

Let's get Cooking...

  1. Fry the garlic and onions with the olive oil. Add in the rice and the pesto and mix. Season with salt.
  2. Scramble the eggs and cook quickly with some olive oil and salt.
  3. Place all the ingredients equally on the tortilla, including the olives, tomatoes, cheeses and avocado. Pinch the sides and roll.
  4. Toast on all sides in a pan with some olive oil.
