Bicol Express Filipino Pork Stew

A deliciously creamy and nutty pork stew from the region of Bicol in the Philippines



  • 1 tablespoon of olive oil
  • 1 small red onion, sliced
  • 250 grams of sliced pork loin
  • 2 teaspoons of shrimp paste
  • 1 tablespoon of grated ginger
  • 1 tablespoon of grated garlic
  • 1 tablespoon of peanut butter
  • 1/2 cup of coconut milk
  • 1 sliced red chili
  • 1 sliced banana pepper
  • Top with some limes

Let's get Cooking...

  1. Fry off the onions and the pork together in a pan. Give the vegetables and the meat some colour.
  2. Add the shrimp paste, garlic, ginger, peanut butter.
  3. Cover with some coconut milk. Add in the red chili.
  4. Let simmer for 5 minutes.
  5. Serve with limes and a sliced banana pepper on top.
