Black Bean Brownies

Who knew black beans were the secret to rich, chewy brownies?



  • 1 (15 ounces) can black beans, rinsed & drained
  • 3 tablespoons canola oil
  • 3 eggs
  • 2/3 cup sugar
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup semisweet chocolate chips, divided

Let's get Cooking...

  1. Preheat oven to 350°F.
  2. Place the beans and oil in a food processor, blender or immersion blender. Cover and process until combined.
  3. Add eggs, sugar, cocoa, vanilla, baking powder and salt. Cover and process until smooth. Stir in half of the chocolate chips.
  4. Pour into a 9-inch square baking pan coated with cooking spray. Sprinkle remaining chocolate chips on top.
  5. Bake for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into bars.
