Breakfast Quinoa Bowl With Fried Egg

Toast is so basic — enjoy your bacon and eggs with a superfood instead.

Ingredients

  • 4 slices bacon, chopped
  • 1/2 onion, sliced
  • 1 cup quinoa, cooked
  • 1 handful arugula
  • 1 tablespoon olive oil
  • 2 eggs

Let's get Cooking...

  1. Add bacon to a pan on medium-high heat and cook until golden brown and fat has rendered (4-6 minutes). Remove and set aside.
  2. Caramelize the onion in the same pan on medium-high heat for 4-6 minutes. Add the bacon back in. Fold in the quinoa to heat through for 1 minute.
  3. Portion the quinoa mix into bowls. Top with the arugula.
  4. Add oil to a small frying pan. Fry the two eggs then add to the top of the quinoa bowls. Crack open the yolks and enjoy!
