Cacciatora Chicken: an Italian classic for a fabulous one pot family healthy meal. The depth of flavor is incredible! A tomato based sauce with chicken, mushrooms, olives, carrots, celery, onion and bacon.
3 pounds chicken in pieces with skin
3 Cups tomato sauce
1 yellow onion
1 celery stalk
3 slices bacon
4 leaves basil
10 ounces cremini mushrooms
4 tablespoons black olives
1/2 Cup dry white wine
2 tablespoons Extra Virgin Olive Oil
Pinch of salt
Let's get Cooking...
Prepare the vegetables. Mince the celery, the carrot and the onion.
Remove the white stalks from the mushrooms and chop the caps in slices.
Finely slice the bacon in tiny cubes.
In a large frying pan or skillet add the Olive Oil and the bacon. Cook for 5 minutes at medium heat stirring occasionally until the bacon gets golden and crispy.
Add the chicken in pieces. Cook for 5 minutes. Turn the chicken on the other side and adjust with salt. Let it cook for another 5 minutes.
Remove the chicken and the bacon from the pan. Set them aside.
In the same pan add the vegetables: celery, carrot, onion and mushrooms. Stir. Adjust with salt and let it cook at medium heat for 5 minutes stirring occasionally.
Add the chicken and bacon back in the pan. Pour the white wine and let it evaporate for 3 minutes.
Add the black olives and the tomato sauce. Cover with a lid, reduce the heat to minimum and simmer covered for 25 minutes or until the chicken is fully cooked.
When plating add few leaves of fresh basil on top. Enjoy!
