Cake Icing recipe
3 egg whites
18 ounces sugar, sifted
1 tablespoon lime juice

Place the egg whites in bain marie and beat until they are warm.
Remove from water bath and beat at high speed on electric mixer until foamy and white.
Add the icing sugar and beat for 5 minutes.
Add the lemon juice, mix and finish the cake.
