Caramel Apple Pudding

This gooey, delicious caramel apple pudding may just be exactly the excuse you need to go apple picking this fall!



  • 1 large apple, diced
  • 2 tablespoons butter
  • 1/2 cup sugar
  • 1 teaspoon rum
  • Pudding:
  • 2 eggs
  • 1 egg yolk
  • 1/2 cup sugar
  • 1 1/4 cups milk, warm
  • To garnish:
  • Whipped cream
  • Parsley

Let's get Cooking...

  1. Preheat oven to 320 degrees. Prepare a round cake pan with butter.
  2. In a saute pan over medium heat, add apples, butter and sugar. Stir with a wooden spoon for about 5 to 6 minutes, until it turns a golden caramel color. Remove from heat and stir in the rum. Pour into prepared cake pan and smooth the top.
  3. In a mixing bowl, add the eggs, egg yolk and sugar. Whisk until combined. Gradually stir in the milk. Pour into the cake pan through a sieve. Bake for 40 minutes.
  4. Cool in the refrigerator. Turn upside down onto a plate and decorate with whipped cream and parsley.
