Caramelized Apple Chai Clafoutis

This baked treat is the tasty union of Indian flavors and a classic French dessert.



  • 1 cup whole milk
  • 4 bags chai tea
  • 4 Tbsp butter
  • ½ cup sugar
  • 3 tart, crisp apples, peeled, cored and sliced
  • 1 Tbsp chai spice (recipe below)
  • 3 eggs
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • Raw sugar for topping
  • Caramel sauce and ice cream, to serve
  • Chai spice
  • 1 tsp cardamom
  • 1 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground cloves

Let's get Cooking...

  1. Preheat oven to 400ºF.
  2. Heat milk and steep with chai tea for 5 minutes.
  3. In a skillet, heat butter and sugar and melt until beginning to caramelize. Add sliced apples, sprinkle with chai spice and toss to coat, cooking until golden.
  4. Strain chai milk and mix in an oven-safe container with eggs and flour. Pour in caramelized apples, folding to combine or arranging on top.
  5. Bake for 20–30 minutes until golden and puffed.
