Carrot Cake With Brigadeirao
1 cup sugar
3 carrots (peeled and chopped)
3/4 cup vegetable oil (180 milliliters)
2 cups flour (230g)
1 1/2 cup sugar (240g)
15 grams baking powder
395 grams (1 can) sweetened condensed milk
200 grams cream
1 cup of chocolate powder
1 tablespoon melted butter
1 egg yolk
Let's get Cooking...
Place 1 cup sugar in a saucepan and melt it in low heat until it turns into caramel.
Place the caramel in a steam pudding mold.
In a food processor, grind the carrots, eggs and oil to form a dough.
In a bowl, mix the flour, 1 1/2 cup sugar and the baking powder.
Add the carrot mixture into the bowl and mix with a spoon or spatula. Reserve.
To make the "brigadeirão, in a food processor, mix the sweet condensed milk, the cream, chocolate powder, melted butter, 2 eggs and 1 yolk. Reserve.
Place the carrot mixture on a baking sheet and add the "brigadeirão" on top.
Bake it in a water bath at 350 °F for more or less 1 hour.
