Carrot Tahini Soup

Light and bright, the type of soup that warms the soul, yet makes you feel healthy and fuzzy inside.



  • 1 white onion sliced
  • 2 carrots peeled and chopped
  • 2 cloves of garlic, sliced
  • 2 tablespoons olive oil
  • 3 tablespoons of chopped parlsey
  • 2 thyme sprigs
  • 3 tablespoons of tahini
  • 1 teaspoon of coriander powder
  • 1 teaspoon of cumin powder
  • 1/2 teaspoon of black pepper
  • 4 cups of seasoned vegetable broth
  • To garnish: sesame seeds, coconut milk, extra virgin olive oil, chopped parsley

Let's get Cooking...

  1. Sear the onions,carrots and garlic with the olive oil in a pot until they are all soft and toasted.
  2. Add in the parsley, thyme, tahini, coriander powder, pepper and cumin. Toss around. Cover with the well seasoned vegetable broth. Add more salt if needed.
  3. Cover and simmer for 20 to 30 minutes.
  4. Blend.
  5. Garnish in a bowl.
