Mini Pizza Pot Pies

Filled with cheese, sauce and whatever else your heart desires, these lil pizza pot pies are the perfect snacking size.


Servings: 12


  • 2 packages pizza dough
  • 1 cup tomato sauce
  • 2 cups shredded mozzarella
  • 12 slices pepperoni
  • 6 mushrooms
  • 2 shallots, minced
  • 1/2 cup Parmesan, grated
  • 2 tablespoons dried oregano
  • 1 teaspoon red chili flakes
  • 1/2 cup olive oil

Let's get Cooking...

  1. Preheat oven to 450 degrees. Dice pizza fillings into very small pieces. Spray cupcake tin with cooking spray.
  2. Roll out pizza dough. Using a 3-inch cookie cutter, cut 6 rounds, then repeat with the 2-inch cutter.
  3. Place 3-inch rounds in the cupcake tins. Spoon sauce all around the inside, then layer toppings like a parfait.
  4. Top each pie with a 2-inch round, pressing edges together. Cut a small vent in the center of each pie. Bake about 15 minutes, brushing tops with olive oil halfway through. Pies are done when they’re golden and filling is bubbling!
