Castella Croque Monsieur

Why use basic bread when Japanese sponge cake adds much more flavor?



  • 8 slices castella
  • 1 egg
  • 100cc milk
  • 20 grams butter
  • 1 tablespoon bechamel sauce
  • 2 slices cheddar cheese
  • Ham or pastrami slices
  • Honey

Let's get Cooking...

  1. Combine egg with milk and mix well.
  2. Spread bechamel sauce on four of the castella slices. Top with cheese and ham (or pastrami) and place the other castella slice on top.
  3. Dip the castella sandwiches into the egg wash and cover all sides well, letting the liquid soak in.
  4. Melt butter in a frying pan and cook the castella sandwiches on both sides until nicely browned.
  5. Cover and cook for 2 more minutes.
  6. Serve with a drizzle of honey if desired.
