Served with balsamic vinegar and Parmesan cheese, this will make you see cauliflower in a whole new light.
1 head of cauliflower
Olive oil (about 1/4 cup)
Salt and pepper
Parmesan cheese, to taste
Balsamic vinegar, to taste

Cut the cauliflower in half and cut it in half again. Sear the center part of the cauliflower on the stovetop (2-3 min. each side) with some salt and pepper. Then put them on a baking sheet and roast at 400F for about 15 minutes. Keep the two ends of the cauliflower for another day.
Add some grated/microplaned parmesan cheese and a bit of balsamic vinegar, and put it in the oven for another 5 minutes.
