Recipe

Ingredients

  • 2 slices bacon, chopped
  • 2 tbsp olive oil
  • ½ yellow onion, chopped
  • ½ cup frozen peas and carrots
  • 1 egg
  • 1 cup cooked day old rice
  • 1 inch ginger, grated
  • 1 clove garlic, grated
  • 3 tbsp sake
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 1 scallion, chopped

Let's get Cooking...

  1. In a wok, on high heat, add oil and bacon. Cook until bacon is translucent, about 3 to 5 minutes.
  2. Add onion, frozen peas and carrots and saute for 2 minutes until onion softens.
  3. Crack egg in center of wok and stir vigorously to scramble. Add in rice, ginger, garlic, sake, soy, honey and salt and pepper and mix well. Turn off the heat.
  4. Scoop rice into a small bowl. Invert onto a plate. Topped with scallions, serve.
