Cheese And Bacon Rosti

A very hearty breakfast that is sure to bring a smile to any household. Bacon, cheese, egg, potatoes, heaven.



  • 3 slices of bacon
  • 1/3 cup minced white onion
  • 4 tbps of chopped spring onions
  • 1 1/2 cup of grated boiled and peeled potatoes
  • 1/2 cup grated gruyere
  • 2 cloves of garlic grated
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 2 tablespoons of butter
  • 2 tablespoons of chopped green spring onions
  • 2 tablespoons of chopped flat leaf parsley

Let's get Cooking...

  1. Cook the bacon in a skillet until brown. Add the white onions and spring onions. Cook for 5 minutes.
  2. Mix and mash the potatoes, cheese, garlic and salt and pepper together.
  3. In a skillet heat up a little butter with the olive oil. Form a patty with the potato mix, about 1.5 inches thick. Cook until brown on both sides (5 minutes per side) on low heat.
  4. Top with parsley, spring onions and salt and pepper if needed.
