Cheese And Caramel Quiche recipe
4.5 tablespoons sugar
1 egg yolk
5 tablespoons of water
2 cups flour
1/2 cup of cold butter
2 onions cut into julienne
1.4 ounces butter
2 tablespoons granulated sugar
2 tablespoons balsamic vinegar
1 1/2 cups heavy cream
1 1/2 cups Gruyère cheese

In a bowl, mix the yolks, sugar and water.
In another bowl, add the flour, salt and butter.
Mix with your fingertips. Make a hole in the middle and put the liquids. Knead with the palms of hands to mix everything well.
Wrap in plastic wrap and store in the refrigerator for at least 2 hours.
Open the dough with the aid of a rolling pin. Cover a springform pan. Store in the refrigerator while the filling is prepared.
Cut the onions in half and place them in a pan with butter. Sauté for 5 minutes stirring well.
Add the sugar and vinegar over the onions and sauté to blend. Turn off the heat and set it aside.
In a bowl, beat the eggs with a pinch of salt and heavy cream. Add the cheese.
Pour the filling over the dough in the pan.
Add the onions. Bake at 350°F for 40 minutes or until golden brown.
