Cheesecake Brûlée recipe
10 1/2 ounces cornflour biscuit
3 1/2 ounces melted butter
14 ounces cream cheese
2/3 cup sugar
14 tablespoons cream (25 percent fat content)
Juice of 1 lemon
1 tablespoon vanilla extract
1 colorless flavorless gelatin package
3 1/2 ounces crystal sugar
Let's get Cooking...
In a food processor, grind the biscuits and add the melted butter to form a crumb.
Arrange the crumb in a springform pan lined with parchment paper. Refrigerate for 20 minutes.
In the processor, beat the cream cheese, sugar, cream, lemon juice, vanilla and gelatin (prepared according to package instructions).
Cover the pan with the filling and refrigerate for 1 hour.
Sprinkle granulated sugar over the cake and burn using a torch.
