Bet you never knew you could do this with pumpkin.
1/4 (300 g) kabocha pumpkin
40 grams potato starch
pinch of salt
120 grams cream cheese
60 grams shredded cheese
6 slices prosciutto
1 tbsp butter
Let's get Cooking...
Peel and slice kabocha pumpkin and place into a bowl. Wrap with plastic and microwave for 5 minutes at 600 watts. Mash the kabocha pumpkin. Add potato starch and salt. Mix well. Divide and mold into 6 balls.
Pick up one kabocha ball and flatten in the palm of your hand. Place a slice of prosciutto on top. Top with cream cheese and shredded cheese. Roll everything into a nice ball, making sure ingredients are completely enclosed inside the kabocha mixture. Flatten the balls into squares.
Heat butter in a frying pan. Place the pumpkin squares on and cook for 3 minutes on medium heat. Flip them over and cook for an additional 3 minutes or until both sides are nicely browned.
