Chia Pudding Parfait


Chia puddings are the best way to make sure you'll never have another boring breakfast.



  • Chia Layer:
  • 1/4 cup chia seeds
  • 1 1/2 cups coconut milk
  • Green Layer:
  • 2 frozen bananas
  • 1 kiwi
  • 4-inch piece of cucumber
  • Handful of baby spinach
  • 1/2 cup coconut milk
  • Berry Layer:
  • 2-3 tablespoons oats
  • Frozen blueberries
  • Fresh strawberries
  • 2 frozen bananas
  • 1/2 cup coconut milk

Let's get Cooking...

  1. Make chia pudding layer: combine chia seeds with coconut milk. Stir vigorously. Let sit covered for 20 minutes in fridge or overnight.
  2. Make green layer: add bananas, kiwi, cucumber, spinach and coconut milk to a blender and blend until smooth. Place in freezer.
  3. Next, make berry layer. Add oats, blueberries, strawberries and bananas to a blender and blend until smooth. Pour in a glass jar.
  4. Add chia pudding on top of the berry layer.
  5. Top your chia pudding with the green layer. Garnish with blackberries. Enjoy immediately.
