Chicken And Rice recipe
3 medium size diced chicken breasts
2 red onions cut into strips
2 cups of white rice
A pinch of saffron
1/2 olive oil well
1 cup white wine
12 asparagus tips (barely boiled)
Salt, pepper, curry and chopped parsley
Let's get Cooking...
Saute the onion on a pan with hot oil, when they get transparent add the chicken and leave until it gets brown.
Add the rice and stir. Add the wine with the dissolved saffron in it, and 4 cups of hot water. Cook for 18 minutes without stirring.
Incorporate the curry and the chopped parsley before removing all the mixture from the pan.
Spice with salt and pepper as you desire. Remove from fire, add the asparagus tips, cover and leave stand for 5 minutes before serving.
