Chicken And Waffles

  • Waffles:
  • 1 1/2 cup flour
  • 1 1/2 teaspoon baking powder
  • 2 eggs
  • 1 1/2 cup milk
  • 3 tablespoons butter, melted
  • Parmigiano-Reggiano
  • Chicken:
  • 2 large chicken cutlets
  • 2 eggs, beaten
  • Breadcrumbs
  • Honey, for drizzling
  • Salt, to taste

Let's get Cooking...

  1. Whisk together flour, baking powder, eggs, milk, and butter in a large mixing bowl. Add grated Parmigiano-Reggiano to taste and combine. Cook batter according to waffle maker instructions.
  2. Season chicken with salt. Grate Parmigiano over chicken cutlet and pat it down to ensure it sticks. Dip cutlet in the eggs and then the breadcrumbs. Heat oil in a pan over medium-high heat. Cook about 3-4 minutes on each side.
  3. To assemble, layer chicken cutlet on top of waffle, grate Parmigiano-Reggiano over top, and drizzle with honey.
