Chicken in Peanut Sauce

It's nutty how tasty chicken is when it's simmered in a spicy, coconut milk-based peanut sauce.

Ingredients

  • ¾ cup peanuts
  • 15g ginger, grated
  • 1 chili, sliced (optional)
  • ½ onion, chopped
  • 3 Tbsp peanut butter
  • ½ cup coconut milk
  • 1 tsp honey
  • 1 lime, juiced
  • 2 chicken breasts
  • 1 cup Basmati rice, cooked
  • ½ bunch coriander (optional)

Let's get Cooking...

  1. In a pan, sauté the peanuts along with the ginger, chili and onion. Transfer to a blender and add peanut butter, coconut milk, honey and lime juice. Blend until a sauce forms.
  2. Season chicken breasts with salt and pepper, then sear in sauté pan on both sides. Add the peanut sauce to the pan, and simmer until chicken is cooked through.
  3. Serve with rice and coriander.
