Chicken Ramen Noodle Stir Fry

Instant ramen is just the base for this fantastic chicken stir fry.

Ingredients

  • 3 chopped skinless boneless chicken thighs
  • 1/2 red onion, chopped
  • 6 florets of broccoli
  • 5 shiitake mushrooms sliced
  • 1 handful of snap peas
  • 2 cloves of garlic, sliced
  • 4 tablespoons of chopped spring onions
  • 1 lime
  • 4 tablespoons of chopped coriander
  • 1 tablespoon of hoisin
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon chili powder
  • 1 teaspoon sesame oil
  • Cracked black pepper to season
  • 1 teaspoon brown sugar
  • 1 teaspoon ginger powder
  • 1 cup of cooked instant ramen noodles
  • 1 tablespoon of crushed peanuts

Let's get Cooking...

  1. Heat up 1 tablespoon of olive oil in a wok.
  2. Cook the chicken thighs for 3 minutes.
  3. Add in: broccoli, mushrooms, snap peas. Cook for 5 minutes.
  4. Add in: garlic, onions, spring onions. Cook for 3 minutes.
  5. Add all the sauces and powders.
  6. Toss for 1 minutes. Add the cooked ramen noodles.
  7. Garnish with peanuts and coriander.
