Chicken Satay Sandwich


A peanut-curry sauce ups the flavor of this Chicken Satay Sandwich. Be sure to give it a try!



  • 2 pieces skinless boneless chicken thighs
  • 2 tablespoons curry powder
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • 1 2 ounces can massaman curry paste
  • 1 can coconut milk
  • 1/2 cup creamy peanut butter
  • Splash of white vinegar
  • 1 teaspoon sugar
  • Salt to taste
  • 2 ciabatta rolls
  • Handful of cilantro
  • Quick pickle: 8 slices cucumber, 1/3 cup thinly sliced red onion, 1 tablespoon white vinegar, 1 tablespoon sugar

Let's get Cooking...

  1. Combine chicken and marinade, and let site for about 1 hour.
  2. In a saucepan, combine peanut sauce ingredients, and simmer for about 8 minutes. Make the quick pickle.
  3. Grill chicken on medium-high heat until fully cooked.
  4. To assemble, slice chicken into strips, place on a sliced ciabatta roll, drizzle with peanut sauce, and top with quick pickle and cilantro.
