Chinese Ramen Chicken Salad

Think salads are boring? Add deep fried ramen noodles to them.

Ingredients

  • 2 large boneless chicken thighs
  • 5 leaves of tuscan kale
  • 1 apple, cubed
  • 1 lemon, juiced
  • 4 spring onions, chopped
  • 1 red onion, thinly sliced
  • 1 red radish, sliced
  • 1 deep fried 1/2 pack of dried ramen noodles
  • 1/4 cup coriander
  • 1/4 cup flat leaf parsley
  • Sauce: 2 tbsp soy sauce, 1 tsp sesame oil, 1 tbsp brown sugar, 2 tbsp rice vinegar and 1 tbsp of peanut butter

Let's get Cooking...

  1. Season the chicken thighs with salt and some olive oil. Grill until cooked.
  2. Grill the kale until crispy.
  3. Toss all the other vegetables together.
  4. Whisk the sauce ingredients together.
  5. Combine the vegetables with the sauce.
  6. Toss in the ramen noodles and the chicken.
