Chocolate Nut Ice Cream Bar

Julie Nolke

This 5-ingredient treat might be the yummiest and easiest throwback frozen dessert.

  • 1 carton of vanilla ice cream
  • 1 jar/bottle of chocolate fudge
  • 1 cup raw unsalted peanuts
  • 2 cups chocolate chips or chocolate candy melts
  • 2/3 cup coconut oil
  • Popsicle sticks
  • Small plastic cups

Let's get Cooking...

  1. Place 4 empty plastic cups on your surface and add 1/4 carton of semi-melted ice cream to the bottom of each. Add a bit of fudge to each, then sprinkle with peanuts. Let set in the fridge for 20 minutes.
  2. After the ice cream has set, add a popsicle stick to each cup. Then add the second layer of ice cream, hot fudge and peanuts. Freeze for 3 to 4 hours.
  3. To remove the cups, squeeze the plastic gently around to pull the sides away from the ice cream. If it does not come out easily dip the plastic in some warm water before attempting again. Return popsicles to freezer to keep cold.
  4. In a microwave-safe bowl, melt the coconut oil and chocolate together.
  5. Dip one popsicle at a time, allowing the excess chocolate to fall back into the container. Scrape excess chocolate off the bottom and return popsicle to the freezer. Repeat the process with the remaining popsicles.
